Meatballs on potato salad

Ingredients

Servings: 4
  • 1 kg waxy potatoes
  • 3 Eggs
  • 1 Bread rolls from the previous day
  • 2 Onions
  • 200 g Gherkins (from the jar)
  • 250 g Whole milk yoghurt
  • 75 g Salad cream
  • 2 TEASPOONS medium hot mustard
  • 7-10 Tbsp Salt
  • 7-10 Tbsp Pepper
  • 500 g mixed minced meat
  • 2-3 TABLESPOONS Oil
  • 1/2 (approx. 250 g) Head romaine lettuce
  • 7-10 Tbsp coarsely ground red berries

    Wash the potatoes and cook in boiling water for about 20 minutes. Boil 2 eggs in boiling water for about 10 minutes until hard. Soak the rolls in cold water. Quench eggs cold and let them cool down. Drain potatoes, rinse with cold water and let them drain. Peel potatoes and cut into slices.

    Peel onions and chop finely. Cut cucumbers into cubes as well. Mix yoghurt, salad cream, 8 tablespoons cucumber water, 1 teaspoon mustard, gherkins and half of the onions. Season with salt and pepper. Mix potatoes and salad dressing and let it stand for a short time. Squeeze out the bread rolls and knead with minced meat, remaining egg, salt, pepper, remaining mustard and onions. Form 8 meatballs from the minced meat mixture. Heat oil in a pan and fry the meatballs for about 8 minutes, turning them over. Peel the eggs and cut 1 egg into slices for garnishing. Chop the rest of the egg. Clean and wash the salad and cut into strips except for a few small leaves for garnishing. Season potato salad with salt, pepper and cucumber water.

    Form 8 meatballs from the minced meat mixture. Heat oil in a pan and fry the meatballs for about 8 minutes, turning them over. Peel the eggs and cut 1 egg into slices for garnishing. Chop the rest of the egg. Clean and wash the salad and cut into strips except for a few small leaves for garnishing. Season potato salad with salt, pepper and cucumber water. Put green salad on a plate, arrange potato salad and meatballs on top. Garnish with slices of egg and serve sprinkled with red pepper
