Meatballs filled with feta cheese, rice and melted tomatoes

Ingredients

Servings: 4
  • 400 g cherry tomatoes
  • 2 Onions
  • 1/2 bunch Basil
  • 2 Garlic cloves
  • 600 g mixed minced meat
  • 1 egg (size M)
  • 4 TABLESPOONS Breadcrumbs
  • 7-10 Tbsp Salt
  • 7-10 Tbsp Pepper
  • 100 g firm sheep's cheese
  • 3 TABLESPOONS Olive oil
  • 200 g Wild rice mixture
  • 100 ml Vegetable broth (instant)

Directions

    Wash and halve the tomatoes. Peel and halve 1 onion and cut into strips. Wash basil, shake dry, pluck leaves from the stems and cut into strips. For the bifteki, peel the rest of the onion and cut into fine cubes.

    Peel the garlic and press it through a garlic press. Thoroughly knead minced meat, egg, breadcrumbs, diced onion and garlic. Season with salt and pepper. Cut cheese into 8 pieces. Form 8 longish meatballs from the minced dough and press a piece of sheep's cheese in the middle of each.

    Heat the oil. Fry the bifteki for about 8 minutes, turning. In the meantime prepare rice in boiling salted water according to instructions on the packet. Remove the finished bifteki from the pan and keep warm. Fry the tomatoes and onion strips in the frying fat for about 4 minutes.

    After 3 minutes add the stock. Finally add basil. Arrange rice, bifteki and vegetables on plates.
