Meat skewers with black beans

Ingredients

Servings: 4
  • 125 g dried black beans
  • 3 medium-sized onions
  • 2 Garlic cloves
  • 1 red chilli pepper
  • 4 Stem(s) flat leaf parsley
  • 4 Stem(s) Mint
  • 2 Limes
  • 1 TEASPOON dried oregano
  • 7-10 Tbsp Pepper
  • 9 TABLESPOONS Olive oil
  • 400 g Beef hoof steak in one piece
  • 300–400 g Chicken filet
  • 50 g streaky smoked bacon
  • 1/2 (approx. 200 g) Iceberg lettuce
  • 4 medium-sized tomatoes
  • 4 TABLESPOONS White wine vinegar
  • 7-10 Tbsp Salt
  • 4 (approx. 200 g) small, soft chorizo sausages
  • 150 g Long grain rice
  • 3 long metal skewers

Directions

    Soak the beans in 1/2 litre cold water overnight

    Peel 1 onion and garlic. Chop the onion finely. Chop the garlic. Cut chilli lengthwise, remove seeds, cut chilli into rings. Wash parsley and mint, shake dry and chop. Squeeze limes. Mix lime juice, onion, garlic, chili, parsley, mint, dried oregano and coarsely ground pepper. Stir in 5 tablespoons of oil. Wash hoof steak and chicken fillets, dab dry and cut into 4 pieces/ cubes. Mix the meat in separate bowls with the marinade and cover and chill overnight.

    Peel and chop 1 onion. Dice the bacon. Fry bacon and onion in a pot. Add the beans with the soaking water, bring to the boil, cover and simmer for about 1 1/2 hours

    Clean, wash and drain the salad and cut into strips. Wash tomatoes, dab dry and cut into slices. Peel 1 onion and cut into fine rings. Mix vinegar, a little salt and pepper and finally fold in 4 tablespoons of oil

    Place each type of meat separately on a skewer and salt. Put the sausages on a third skewer. Place a grid with a fat pan underneath it in the preheated oven (electric cooker: 225 °C/ circulating air: 200 °C/ gas: level 4) and first place the beef skewer on the grid and roast for 25-30 minutes. After 5-10 minutes add the chicken skewer and cook the chorizo skewer for the last 10 minutes

    Prepare rice in boiling salted water according to package instructions. Season beans with salt and pepper. Put lettuce and tomatoes on a large plate and spread the marinade over it. Arrange roasted skewers on top. Add the beans and rice
