Clean and wash spring onions and radishes. Cut spring onions into thin slices, radishes into small sticks. Wash and finely chop the herbs, except for one bunch for garnishing.
Mix yoghurt and prepared ingredients. Season with salt, pepper, lemon juice and mustard. Wash the cucumber, cut into thin slices or slice. Line a plate with it. Arrange matjes and sauce on top.
Garnish with bouquets of herbs, some lettuce leaves and lemon slices. Boiled potatoes taste good with it.
