Clean, wash and chop the zucchini and carrots. Peel and chop the onion and fry in 1 teaspoon of oil. Dice the ham. Add vegetable stock and vegetables and cook for about 5 minutes. Stir in mashed potato powder and fold in diced ham.
Beat the egg and fry in the remaining oil. Serve fried egg and vegetable puree garnished with chives.
