Mash plaice with herb salsa and Swedish potatoes

Ingredients

Servings: 4
  • 1 kg medium-sized potatoes
  • 80 g Butter
  • 7-10 Tbsp Salt
  • 50 g freshly grated Parmesan cheese
  • 2 medium-sized tomatoes
  • 1 small onion
  • 3 Garlic cloves
  • 1 Pot of fresh coriander
  • 3 Limes
  • 3 TABLESPOONS Olive oil
  • 7-10 Tbsp Pepper
  • 4 Plaice ready for cooking (200-250 g each)
  • 75 g Flour for turning
  • 6 TABLESPOONS Oil
  • 7-10 Tbsp Lime

Directions

    Peel the potatoes, wash and dab dry. Place 1 potato on each tablespoon and cut vertically with a sharp knife, up to the edge of the spoon, at a distance of 3 mm.

    Melt 50 g butter, spread some butter on an ovenproof dish. Place the potatoes with the incisions facing upwards, spread with fat and salt. Bake in the preheated oven (electric cooker: 200 °C/ convection oven: 175 °C/ gas: level 3) for 30 minutes.

    In the meantime, brush with remaining grease. Sprinkle potatoes with parmesan and bake in 15-20 minutes. Meanwhile, for the herb salsa, wash the tomatoes, quarter them, remove the seeds and cut them into small cubes.

    Peel onion and garlic. Chop the onion finely, press the garlic through a garlic press. Wash the coriander, dab dry and chop the leaves, except for something to garnish. Wash 1 lime, dab dry and finely grate the peel.

    Squeeze 2 limes. Mix tomatoes, onions, garlic, coriander, olive oil, lime juice and zest. Season to taste with salt and pepper. Squeeze the rest of the lime. Wash the plaice thoroughly, dab dry and sprinkle with lime juice.

    Season the plaice with salt and pepper. Put the flour on a plate, turn the floes in it and tap off any excess flour. Spread the oil on two large pans, heat them up and fry the plaice on the white side first until crispy.

    Then turn and fry the other side also until golden brown. Finally add 15 g butter to each side. Arrange the plaice on 4 plates with the herb salsa. Garnish with lime slices and coriander.
