Finely grate the chocolate. Coarsely crumble the Amarettini. Mix mascarpone, quark, yoghurt, vanilla sugar and sugar with the whisk of the hand mixer.
Carefully fold in the raspberries and Amarettini. Pour cream into a large dessert bowl. Put in a cool place for at least 4 hours. Sprinkle with chocolate and decorate with berries and lemon balm as desired.
