Ingredients

  • 40 g Walnuts
  • 70 g pitted dates
  • 1 Pear or apple
  • 280 g Flour
  • 100 g Wholegrain oat flakes
  • 100 g Sugar
  • 2 TEASPOONS Baking Powder
  • 1 TEASPOON ground cinnamon
  • 1⁄4 Tsp Nutmeg
  • 1⁄2 Tsp Baking soda
  • 1⁄2 Tsp Salt
  • 50 g Butter
  • 250 g Buttermilk
  • 125 ml Maple syrup
  • 1 Egg (Gr. L)
  • 1 TEASPOON Sugar beet syrup

Directions

    Coarsely chop the walnuts. Finely chop dates. Peel, quarter, core and grate the pear. Preheat oven (electric cooker: 190 °C). Butter a 12-piece muffin tin.

    Mix the dry ingredients (flour, wholemeal oat flakes, sugar, baking powder, cinnamon, nutmeg, baking soda, salt) in a bowl. Melt butter and mix it hot with the remaining liquid ingredients.

    Add to the dry ingredients and mix everything briefly until all ingredients are just mixed.

    Briefly fold in the walnuts, dates and pear. Spread the dough evenly on the muffin tin. Bake in the oven for about 21 minutes. As a cooking test, prick a muffin with a wooden skewer. If the skewer stays clean, the muffins are ready.

    Stick a little more dough to it, put it back in the oven and bake a few minutes longer.
