Ingredients

  • 1 cube (42 g) fresh yeast
  • 4 TABLESPOONS Sugar
  • 40 g Butter or margarine
  • 1/4 l Milk
  • 500 g Flour
  • 2 Eggs (size M)
  • 1 package Vanillin sugar
  • 1 pinch Salt
  • 200 g laced apricots
  • 250 g Marzipan raw mass
  • 3 TABLESPOONS Liqueur d'amande (en alternative au jus d'orange)
  • 75 g Icing sugar
  • 2 TABLESPOONS Lemon juice
  • 7-10 Tbsp Flour
  • baking paper

Directions

    Crumble the yeast and mix with 1 tablespoon of sugar. Melt the fat, add cold milk and remove from the heat immediately. Put flour, 1 egg, 3 tablespoons of sugar, vanillin sugar and salt into a mixing bowl. Add yeast and lukewarm milk mixture and knead with the dough hooks of the hand mixer to a smooth yeast dough. Lightly dust the dough with flour and let it rise covered in a warm place for about 30 minutes. In the meantime dice the apricots finely.

    Separate the remaining egg. Mix egg white, marzipan and liqueur to a creamy mixture. Stir in the apricots. Knead the yeast dough again and roll it out into a rectangle (approx. 60 x 40 cm) on a clean, flour-dusted tea towel. Spread marzipan cream evenly on the dough. Cut the plate into 4 strips (approx. 10 x 60 cm). Roll up each strip from the long side. Turn 2 rolls around each other. Cut the braids into 5 pieces (approx. 12 cm). Spread them on 2 baking trays lined with baking paper and let them rise for another 10-15 minutes. Bake the trays one after the other in a preheated oven (electric cooker: 200 °C/ convection oven: 175 °C/ gas: level 3) for 20-25 minutes. After 5 minutes, turn the temperature down (electric oven: 175 °C/ convection oven: 150 °C/ gas: level 2).

    Turn 2 rolls around each other. Cut the braids into 5 pieces (approx. 12 cm). Spread them on 2 baking trays lined with baking paper and let them rise for another 10-15 minutes. Bake the trays one after the other in a preheated oven (electric cooker: 200 °C/ convection oven: 175 °C/ gas: level 3) for 20-25 minutes. After 5 minutes, turn the temperature down (electric oven: 175 °C/ convection oven: 150 °C/ gas: level 2). Mix the egg yolks and 1 teaspoon of water and brush the plaits with it about 5 minutes before the end of the baking time. Mix icing sugar and lemon juice and brush the finished, still hot plaits thinly with it. Let it cool down on a cake rack
