Marinated pork filet with lemon sauce

Ingredients

Servings: 4
  • 2 Pork fillets (approx. 300 g each)
  • 7-10 Tbsp Juice of 1 lemon
  • 1 1/2 TSP. Sugar
  • 1 TABLESPOON green pepper (from the glass)
  • 500 g Carrots
  • 500 g baby potatoes
  • 7-10 Tbsp Salt
  • 1 Tbsp-OIL
  • 2 TABLESPOONS Lemon Jelly
  • 7-10 Tbsp white pepper
  • 10 g Butter or margarine
  • 7-10 Tbsp some fresh mint leaves

Directions

    Wash the meat and dab dry. Mix lemon juice and 4 tablespoons of water, 1 teaspoon of sugar and drained green pepper. Marinate the fillet in it for about 1 hour. Turn several times.

    Peel the carrots, wash them and peel them into diagonal slices. Peel and wash potatoes. Cook the carrots and potatoes separately in a little salt water for about 15 minutes. Remove the fillet from the marinade and dab dry.

    Heat the oil in a pan. Fry the meat in the oil for about 15 minutes. Remove and keep warm. Deglaze the meat with marinade. Stir in lemon jelly and season to taste with salt and pepper.

    Wash mint leaves and dab dry. Chop some leaves. Cut the fillet into slices. Drain carrots and potatoes. Sauté carrots in melted fat. Arrange meat, vegetables and potatoes on a preheated plate.

    Pour a little sauce over the meat. Sprinkle with chopped mint and garnish with a mint bouquet. Add the rest of the sauce.
