Drain the mozzarella and cut into slices. Peel and chop the garlic. Mix vinegar, mustard, honey, garlic, some salt and pepper. Pour over the mozzarella slices and leave to marinate for at least 1/2 hour. In the meantime wash the tomatoes, dab dry and cut into cubes. Halve the avocado and remove the stone. Remove the flesh from the skin, dice and sprinkle with 2 tablespoons of lemon juice.
Clean, wash and drain the rocket. Line a plate with the leaves, lift the mozzarella out of the marinade and arrange on top. Mix the marinade with the remaining lemon juice and olive oil. Mix in the avocado and tomatoes and spread over the mozzarella slices. Sprinkle with dill if desired and garnish with lemon wedges. Serve with baguette or ciabatta
