Marinated lamb salmon

Ingredients

Servings: 4
  • 2 Garlic cloves
  • 140 ml Olive oil
  • 7-10 Tbsp Juice of 1 lemon
  • 750 g Lamb salmon
  • 800 g Potatoes
  • 7-10 Tbsp Salt
  • 650 g green beans
  • 7-10 Tbsp white pepper
  • 1/2 bunch Mint
  • 100 g Butter
  • 1 Onion
  • 7-10 Tbsp Lemon slices

Directions

    Peel the garlic and press it through a garlic press. Mix 100 ml oil, garlic and lemon juice. Wash the lamb salmon, dab dry and leave to marinate for about 6 hours or overnight.

    Peel, wash and slice the potatoes. Fry in 2 tablespoons of hot oil, turning continuously, for about 15 minutes. Season with salt. Clean, wash and cook the beans in boiling salted water for 10-15 minutes.

    Drain the lamb salmon and fry in the remaining hot oil, turning for 10-15 minutes. Also season with salt and pepper. Wash mint, dab dry and cut into strips. Knead 80 g butter and mint, season with salt and pepper.

    Peel the onion and fry in the remaining butter until translucent. Drain beans and toss briefly. Arrange lamb salmon, beans and potatoes with the mint butter. Garnish with lemon slices as desired.
