Marinated carrots with almonds and feta cheese

Ingredients

Servings: 9
  • 600 g Carrots
  • 7-10 Tbsp Salt
  • 2-3 Garlic cloves
  • 3-4 Stem(s) fresh mint
  • 2 Lemons
  • 7-10 Tbsp Pepper
  • 5-6 Tbsp Olive oil
  • 40 g Almond slivers
  • 125 g Sheep's cheese

Directions

    Clean, wash and cut the carrots into thick slices. Cook in boiling salted water for about 8 minutes. In the meantime peel garlic and press it through a garlic press. Wash the mint, dab dry and cut into fine strips, except for a little garnish.

    Squeeze lemons and mix the juice with salt, pepper and mint. Finally, beat the oil into it. Drain the carrots and add them warm to the marinade. Lightly roast the almond slivers in a dry pan.

    Take out and let it cool down. Crumble the feta cheese and put 1-2 tablespoons aside. Add the rest of the sheep's cheese and almond slivers to the carrots and leave to stand. Shortly before serving, sprinkle with remaining feta cheese and garnish with mint.
