Peel fresh mangos and remove them from the stone in cracks. Drain mangos from the tin on a sieve. Put a few slices aside for garnishing, cut the remaining mangos into pieces. Separate the eggs. Beat egg yolk and sugar until creamy.
Add quark, pudding powder and possibly 2 tablespoons of mango juice and mix everything to a smooth cream. Beat the egg whites until stiff. Carefully fold the mango pieces and egg white into the quark mixture. Pour the mango quark mixture into a glass bowl and decorate with mango wedges and lemon balm
