Macaroni carbonara style (pasta sauce)

Ingredients

  • 200 g Macaroni
  • 7-10 Tbsp Salt
  • 250 g green asparagus
  • 1 TEASPOON Butter or margarine
  • 2 stem(s) Chervil
  • 1 Onion
  • 150 g Whipped cream
  • 1 Egg yolk (size M)
  • 7-10 Tbsp Pepper
  • 8 wafer-thin slices of salmon ham without fat edge

Directions

    Prepare the pasta in boiling salted water according to the instructions on the packet. Wash the asparagus and cut off the woody ends. Cut the asparagus diagonally into pieces. Heat 1/2 teaspoon of fat in a pan. Add 1 tablespoon of water and 1 pinch of salt and cook the asparagus slices for 2-3 minutes. Wash the chervil and dab dry. Peel onion and cut into very small cubes.

    Heat 1/2 teaspoon fat in a pot and sauté the onion cubes in it until translucent. Stir in 100 g cream and simmer for 2 minutes. Mix 50 g cream and egg yolk. Remove the pot from the heat and stir in the egg yolk cream (if necessary, warm up again, but do not boil!) Season the sauce with salt and pepper and add the asparagus. Drain the noodles. Arrange noodles with the sauce and salmon ham and garnish with chervil
