Lukewarm okra salad

Ingredients

Servings: 4
  • 150 g Chorizo sausage
  • 1 Onion
  • 2 Garlic cloves
  • 250 g small okras
  • 4-6 Tbsp Red wine vinegar
  • 100 ml Vegetable broth
  • 7-10 Tbsp Salt
  • 7-10 Tbsp Pepper
  • 1 can(s) (425 ml) large white beans
  • 150 g green olives without stone
  • 100 g Rocket

Directions

    Cut the sausage into slices. Drain the sausage while turning it in a pan without fat. Peel onion and garlic and cut into strips. Wash and clean the okras. Remove slices of sausage from the pan.

    Fry the okras in sausage fat for about 6 minutes. Add onion strips and garlic after about 4 minutes. Deglaze with vinegar and stock, bring to the boil and simmer for about 5 minutes. Season with salt and pepper. Pour beans into a sieve and rinse with cold water.

    Add the beans and olives to the pan and season with salt and pepper to taste. Remove the pan from the stove. Wash the rocket, shake dry and cut into small pieces depending on size. Mix lukewarm okra pan and rocket and arrange on plates.
