Linguine with asparagus and Gremolata

Ingredients

  • 500 g green asparagus
  • 100 g cherry tomatoes
  • 50 g Bacon
  • 1 untreated lemon
  • 1 small clove of garlic
  • 6 Stem(s) Parsley
  • 400 g Linguine Noodles
  • 7-10 Tbsp Salt
  • 2-3 TABLESPOONS Olive oil
  • 50 g Caper apples
  • 7-10 Tbsp Pepper

Directions

    Wash the asparagus and cut off the woody ends. Cut the asparagus diagonally into slices. Wash and halve the tomatoes. Cut the bacon into pieces. 2. for the Gremolata wash lemon hot and grate 1/2 of the peel thinly. Peel garlic. Wash parsley and pluck off the leaves. Chop garlic, lemon peel and parsley very finely

    Cook the pasta in boiling salted water according to the instructions on the packet. Heat the oil in a large pan. First fry the bacon for about 1 minute, then add the asparagus and fry for another 2-3 minutes. Finally, add caper apples and tomatoes, season with salt and pepper and continue frying for about 1 minute

    Drain the pasta and add it to the vegetables and bacon in the pan. Mix well and arrange on plates. Finally sprinkle with Gremolata
