Lime sorbet with gin

Ingredients

Servings: 4
  • 150 g Sugar
  • 7-10 Tbsp grated peel of 1 lime
  • 4 Limes
  • 1 Protein
  • 12 TABLESPOONS Gin
  • 7-10 Tbsp Lemon balm

Directions

    Bring 300 ml of water, sugar and lime zest to a short boil while stirring. Leave to cool. Cut limes in half and squeeze. Beat egg white until stiff. Mix sugar water, lime juice and beaten egg white. Pour into a bowl and let it freeze for about 1 hour. Stir well, deep-freeze for another 30 minutes and repeat after 30 minutes.

    Then stir again, form into balls with the scoop and freeze for about 30 minutes. Keep freezing until serving. Place 1 ball of sorbet in each glass and pour 3 tablespoons of gin over each. Decorate with lemon balm
