Lime curd dessert

Ingredients

  • 1 pack of (300 g) frozen berry mixture
  • 1 package Vanillin sugar
  • 4 sheets white gelatine
  • 2 Eggs
  • 250 g Cream quark (40% fat in dry matter)
  • 3-4 Tsp Sugar
  • 6 TABLESPOONS Lime juice
  • 200 g Whipped cream
  • 1 Lime
  • 2 TABLESPOONS crushed pistachio kernels
  • 7-10 Tbsp Mint

Directions

    Defrost berries sprinkled with vanilla sugar. Soak the gelatine. Separate eggs. Stir egg yolks, quark, sugar and lime juice until smooth. Squeeze the gelatine, dissolve and stir in.

    Separately beat egg whites and cream until stiff and fold into the quark. Pour the quark into a piping bag with a star-shaped spout. Fill berries (up to 6 pieces) into glasses. Spray the quark onto them. Peel lime so that the white skin is completely removed.

    Then cut the lime into slices. Decorate the quark with lime slices, berries, mint and chopped pistachios.
