Onions peel and chop finely. Form 12 hedgehogs from seasoned pork sausage: use an ice-ball scoop (e.g. 5 cm Ø) to cut off balls. Then form hedgehogs with moistened hands.
Lightly press the onion cubes as spikes on the hedgehog's back. Finally, press 24 black peppercorns lightly into the ground pork as eyes. Arrange the mince on a plate. Garnish with lettuce or herb leaves if desired.
