Lentil stew with prunes

Ingredients

  • 50 g semi-soft dried plums without stone
  • 1 (approx. 300 g) small greens
  • 1 medium onion
  • 200 g tripped chop of Kasseler
  • 2-3 stem(s) Thyme and parsley
  • 1 TABLESPOON Oil
  • 100 ml Vegetable broth (instant)
  • 50 g red lentils
  • 1 can(s) (850 ml; 530 g of extractable weight) Lentil stew
  • 7-10 Tbsp Salt
  • 7-10 Tbsp Pepper

Directions

    Cut plums into small cubes. Wash, clean and chop the greens. Peel and finely dice onion. Cut the smoked pork loin into small cubes. Wash thyme and parsley, dab dry and, except for something to garnish, pluck from the stalks. Heat the oil in a pot and sauté the onion.

    Add prunes and sliced pork loin. Sweat briefly and deglaze with broth. Add red lentils and simmer for about 5 minutes. Add lentil stew and herbs and bring to the boil. Season to taste with salt and pepper. Arrange stew in soup plates, garnish with remaining parsley and thyme
