Lemongrass chicken skewers with caramelized vegetables

Ingredients

  • 4 Chicken fillets (approx. 150 g each)
  • 2 TABLESPOONS Honey
  • 4 TABLESPOONS Soy sauce
  • 2 TABLESPOONS + 1 tsp lemon juice
  • 500 g Potatoes
  • 7-10 Tbsp Salt
  • 7-10 Tbsp Pepper
  • 1 Egg yolk (size M)
  • 1/2 untreated lemon
  • 16 Lemon leaves
  • 8 Sticks of lemongrass
  • 2-3 TABLESPOONS Oil
  • 4 Carrots
  • 1 collar Spring onions
  • 30 g Butter or margarine
  • 1 TEASPOON Sugar
  • 200 g Poultry stock (glass)
  • 1 TEASPOON Cornstarch
  • 7-10 Tbsp Oil
  • baking paper

Directions

    Wash the chicken fillets and pat them dry. Cut the fillets into 4 pieces. Mix honey, soy sauce and 2 tablespoons lemon juice. Place the meat pieces in the marinade, turn in it and let it stand for about 30 minutes.

    Peel, wash and roughly grate the potatoes. Season with salt and pepper. Stir in egg yolk. Line a baking tray with baking paper and brush with oil. Form 16 small Rösti from the potato dough on the baking paper and bake in the preheated oven (electric cooker: 200 °C/ convection oven: 175 °C/ gas: level 3) for 15-20 minutes.

    Wash the lemon, dab dry and cut into 8 pieces. Wash the lemon leaves. Wash lemongrass stalks and dab dry. Cut approx. 3 slices from each stick diagonally. Put 2 pieces of meat, 1 piece of lemon and 2 lemon leaves on each stick.

    Heat the oil in a large frying pan. Fry the skewers in it at medium heat for about 10 minutes, turning them from time to time. Peel, wash and cut carrots into long thin slices. Clean and wash spring onions and cut them into long diagonal pieces.

    Melt the fat in a pot. Add vegetables and steam for about 2 minutes. Sprinkle sugar over them and let them caramelize a little. Season with salt and pepper. Remove the skewers. Remove the frying set with stock and bring to the boil.

    Add lemongrass slices. Mix the starch with some water until smooth and thicken the sauce with it, bring to the boil again. Season to taste with salt, pepper and 1 tsp. lemon juice. Arrange lemongrass chicken skewers and vegetables on plates.

    Potato rösti and sauce extra.
