Lemon muffins with apples and raisins

Ingredients

Servings: 20
  • 2 small apples (about 250 g)
  • 250 g Flour
  • 1 TABLESPOON Cornstarch
  • 2 coated Tsp Baking Powder
  • 1/2 TEASPOON Baking soda
  • 1 package (6 g) finely grated lemon peel
  • 1 egg (size M)
  • 150 g Sugar
  • 100 ml Sunflower oil
  • 200 ml Lemon Buttermilk
  • 30 g Raisins
  • 7-10 Tbsp Icing sugar
  • 7-10 Tbsp streak
  • 40-60 Paper forms

Directions

    Peel and halve the apples and remove the core. Cut the apple halves into small pieces. Sieve flour, starch, baking powder and baking soda into a mixing bowl. Add lemon peel. In a second bowl beat the egg. Mix sugar, oil and buttermilk. Add apple pieces and raisins. Gradually stir in the flour mixture. Place 2-3 paper cups in each and divide the dough into 20 portions. Place on a baking tray and bake in a preheated oven (electric: 175 °C/ gas: level 2) for 20-25 minutes. Let cool on a cake rack. Dust with icing sugar and decorate as desired with lemon peel strips and lemon balm
