Lemon Lime Cake

Ingredients

  • 2 Eggs (size M)
  • 125 g Sugar
  • 7-10 Tbsp grated rind of 1 untreated lemon
  • 100 g Flour
  • 1 heaped Tsp baking powder
  • 2-3 TABLESPOONS Coconut liqueur 16 % vol. (Batida de Coco)
  • 75 g redcurrant jelly
  • 7 sheets white gelatine
  • 3 (250 g each) Mug of lemon yoghurt
  • 7-10 Tbsp Juice of 1 lemon
  • 150 g Whipped cream
  • 1/2 Lemon and lime to decorate
  • 30 g Coconut chips
  • 7-10 Tbsp some mint leaves

Directions

    Separate eggs. Beat the egg whites and 2 tablespoons of water with the whisk of the hand mixer until stiff and finally add 75 g of sugar. Add egg yolk and lemon peel and fold in.

    Mix flour and baking powder, sieve onto the egg foam and carefully fold in. Line the bottom of a springform pan (26 cm Ø) with baking paper, fill in the sponge mixture and smooth it down. Bake in the preheated oven (electric: 175 °C/ gas: level 2) for 15-20 minutes.

    Remove the base from the mould and let it cool on a cake rack. Place a cake ring around the cooled base and sprinkle the base with coconut liqueur. Heat the jelly and spread it thinly on the base.

    Soak gelatine in cold water. Mix yoghurt, lemon juice and remaining sugar. Squeeze the gelatine, dissolve it and mix with 1-2 tablespoons of lemon yoghurt. Then stir into the remaining yoghurt and refrigerate for 5 minutes.

    In the meantime, whip cream until stiff, stir into the yoghurt cream and spread loosely on the sponge cake base. Put in a cool place for 4-5 hours. Wash lemon and lime thoroughly, dab dry and cut into thin slices.

    Remove the cake from the cake ring and press the coconut chips onto the cream edge. Sprinkle the remaining coconut chips on the cake and cover with lemons and slices of lime. Serve decorated with mint leaves. Makes 12-16 pieces.
