Wash, clean and slice the strawberries. Mix jelly powder and 200 ml cold water in a pot and let it swell for 5 minutes. Add sugar and heat while stirring until everything is dissolved, do not let it boil.
Remove from the heat and stir in 800 ml cold water. Divide some strawberry slices into four dessert glasses. Add some liquid and let it set in the fridge for about 1 hour. Repeat until all strawberries and remaining liquid is used up.
Allow to set for about 1 hour each time. Whip the cream until semi-stiff and add. Decorate with lemon spiral and lemon balm leaves.
