Lemon jelly with apricots

Ingredients

Servings: 4
  • 6 sheets white gelatine
  • 1 jar(s) (425 ml; separation weight: 250 g) Apricots
  • 100 ml Lemon juice
  • 50 g Sugar
  • 7-10 Tbsp whipped cream and lemon balm

Directions

    Soak gelatine in cold water. Drain the apricots on a sieve and collect the juice. Fill lemon and apricot juice with water to 400 ml liquid. Add sugar and heat up. Squeeze out the gelatine, dissolve in it and let it cool down for about 15 minutes. Cut the apricots into slices, except for a few for decoration, into 4 glass bowls. Pour jelly liquid over them and put them in a cool place to set. Decorate as you like with cream, apricot slices and lemon balm
