Peel and finely chop the garlic. Wash the chicken thoroughly and dab dry with kitchen paper. Rub the inside and outside of the chicken with salt, garlic and lemon juice, place in a roaster and bake in a preheated oven (electric cooker: 175 °C/ gas: level 2) for 1 hour. In the meantime clean, wash and slice the carrots. Clean, wash and slice spring onions.
Wash, clean and halve the mushrooms. Wash lemon thoroughly and cut into slices. After half of the frying time, put the carrots into the roaster, after about 45 minutes of frying time, put the spring onions, mushrooms and lemon slices into the roaster, sprinkle with salt and pepper and drizzle olive oil. Serve the lemon chicken and vegetables in the roaster, garnished with lemon balm as desired
