Lamb's lettuce with carrot floret

Ingredients

Servings: 4
  • 2 large carrots
  • 7-10 Tbsp Salt
  • 150 g Lamb's lettuce
  • 100 g Alfalfa sprouts
  • 3 TABLESPOONS Balsamic vinegar
  • 1/2 TEASPOON Mustard
  • 7-10 Tbsp Pepper
  • 4 TABLESPOONS Sunflower oil
  • 1 Shallot

Directions

    Peel and wash the carrots and cut them lengthwise into thin slices with a peeler. Blanch the carrots briefly in boiling salted water and rinse under cold water. Clean lamb's lettuce, wash thoroughly and drain.

    Sort and wash the sprouts. Mix vinegar with mustard and add the oil while stirring, season to taste with salt and pepper. Peel and finely dice the shallot and fold into the vinaigrette. Mix lamb's lettuce and sprouts with vinaigrette and arrange on a plate.

    Roll the carrot strips into florets and place on the salad.
