Köfte with almond sauce and tomato salad

Ingredients

  • 100 g Almond slivers
  • 2 Onions
  • 2 Garlic cloves
  • 1 collar flat leaf parsley
  • 400 g Minced beef
  • 400 g minced lamb
  • 2 Eggs (size M)
  • 20 g Breadcrumbs
  • 7-10 Tbsp Salt
  • 7-10 Tbsp Pepper
  • 1 TEASPOON ground cinnamon
  • 1 knife tip ground pimento
  • 1 can(s) (425 ml) Chickpeas
  • 4 red onions
  • 1/2 (approx. 250 g) Cucumber
  • 600 g ripe, medium-sized tomatoes
  • 3 TABLESPOONS White wine vinegar
  • 1-2 TEASPOONS Agave syrup
  • 4 TABLESPOONS Olive oil
  • 4 Stem(s) Mint
  • 80 g Almond paste
  • 1-2 TEASPOONS Lemon juice
  • 7-10 Tbsp Chili Flakes
  • 7-10 Tbsp Oil

Directions

    For the Köfte, roast almond slivers in a pan while turning them golden brown, place them on a plate and let them cool down. Peel and finely chop 1 onion and 1 garlic clove. Wash parsley, shake dry, pluck leaves and chop finely.

    Put the minced meat, about half of chopped parsley, almond slivers, chopped onion, garlic, eggs and breadcrumbs in a bowl and knead. Season with salt, pepper, cinnamon and pimento. Rub the palms of your hands with a little oil and form approx. 16 long rolls (approx. 7 cm each) from the chopped mass, cover and chill.

    For the salad, put chickpeas in a sieve, rinse and drain. Peel and halve the red onions and cut them into very thin slices. Halve cucumber lengthwise, scrape out seeds and cut into thin slices.

    Wash, clean, halve, seed and cut the tomatoes into fine strips. Pass the collected tomato seeds through a sieve with liquid, mix with vinegar, thick juice and olive oil and season with salt and pepper.

    Mix chickpeas, onions, cucumber and tomatoes with the salad dressing. Wash the mint, shake dry and chop. Mix into the salad with about half of the remaining parsley. Marinate for about 30 minutes.

    Heat a large grill pan and brush it thinly with oil. Grill the minced meat rolls for about 20 minutes, turning occasionally. Meanwhile peel and finely chop 1 clove of garlic and 1 onion.

    Bring 100 ml of water to the boil, cover the onion and garlic and stew for about 10 minutes.

    Mix the almond paste and the remaining parsley, except for a little for sprinkling, with the onion-garlic mixture and season with salt, pepper and lemon juice. Season the salad again with salt and pepper.

    Arrange salad and köfte, sprinkle with chilli. Sprinkle the sauce with parsley and serve.
