Spiced lamb with couscous

Ingredients

Servings: 4
  • 1 Onion
  • 1 TABLESPOON Olive oil
  • 2 TEASPOONS Sumac (spice from the eastern Mediterranean)
  • 1 TEASPOON Cumin
  • 350 g minced lamb
  • 200 g Broccoli
  • 250 g cherry tomatoes
  • 150 ml Chicken stock
  • 25 g Pine nuts
  • 25 g Pistachio kernels
  • 1-2 TABLESPOONS Harissa Paste
  • 7-10 Tbsp Salt
  • 7-10 Tbsp Pepper
  • 50 g Couscous
  • 7-10 Tbsp Thyme

Directions

    Peel the onion and cut into small cubes. Heat the oil in a large pan. Sauté the onion and spices for about 5 minutes at low heat. Add minced meat and fry for 5-7 minutes until crumbly.

    Wash the broccoli and cut into small florets. Wash the tomatoes, cut some in half. Add chicken stock, tomatoes, broccoli, pine nuts, pistachios and harissa to the mince and mix well. Cover and simmer for 8-10 minutes.

    Season to taste with salt and pepper.

    In the meantime, prepare the couscous according to the instructions on the packet. Mix the couscous loosely into the minced meat mixture and arrange on a plate. Garnish with thyme.
