Klönschnack crumble cake with apple and plum

Ingredients

  • 1 kg sour apples (e.g. Elstar)
  • 400 ml apple juice
  • 2 packages Vanilla sugar
  • 2 heaped Tbsp Cornstarch
  • 900 g Plums and prunes
  • 1 Cinnamon stick
  • 1 TABLESPOON + 200 g brown sugar
  • 7-10 Tbsp some + 300 g cold butter
  • 500 g Flour
  • 7-10 Tbsp Salt
  • 1 Egg (Gr. M)
  • 7-10 Tbsp Icing sugar

Directions

    For the apple compote, peel, quarter, core and cut apples into pieces of about 2 cm. Put them in a pot with 150 ml apple juice and 1 vanilla sugar. Bring to the boil, cover and simmer for about 4 minutes.

    Mix 1 tablespoon of starch with 5 tablespoons of apple juice until smooth. Stir into the apple compote and simmer for about 1 minute while stirring. Let it cool down, stirring more often.

    For the plum compote, wash, halve and stone the plums. Bring to the boil in a saucepan with 150 ml juice, cinnamon stick and 1 tablespoon sugar. Cover and cook for about 3 minutes. Stir 1 tbsp. starch with 5 tbsp. juice until smooth.

    Stir into the plum compote. Simmer for about 1 minute while stirring. Leave to cool, stirring more often. Remove the cinnamon stick.

    Preheat oven (electric cooker: 175 °C/circulating air: 150 °C/gas: see manufacturer). Grease a baking tray. For the crumble dough, put flour, 300 g butter in pieces, 200 g sugar, 1 pinch of salt, 1 vanilla sugar and egg in a mixing bowl.

    First knead into crumbles with the dough hooks of the mixer, then with your hands. Good 2⁄3 Press the crumbles onto the tray to form a base. Spread the apple and plum compote in strips about 10 cm wide on the bottom of the dough.

    Add the rest of the sprinkles.

    Bake in the hot oven on the lower shelf for about 45 minutes. Remove and let cool off. Dust with icing sugar as desired. Whipped cream tastes good with it.
