Ingredients

Servings: 7
  • 2 Bread rolls from the previous day
  • 2 Federation Parsley
  • 4 large onions
  • 2 kg Potatoes (not early potatoes!)
  • 6 Eggs (Gr. M)
  • 7-10 Tbsp salt, pepper, nutmeg
  • 4 Mettenden (approx. 100 g each)
  • 200 g smoked streaky bacon, 3 tablespoons oil
  • 7-10 Tbsp Fresh cream

Directions

    Soak the buns. Wash and chop the parsley. Peel and grate onions. Peel, wash and finely grate potatoes. Drain and collect the liquid. Let the liquid rest so that the potato starch settles, then carefully drain the water.

    Squeeze the buns. Knead with onions, potatoes, the starch, eggs and parsley. Season with salt, pepper and nutmeg. Cut the sausage into slices and mix in

    Dice the bacon. Heat oil in a large frying pan. Leave the bacon in it until crispy. Add potato mixture and mix well. Brush smooth. Bake in a preheated oven (electric cooker: 200 °C/circulating air: 175 °C/gas: level 3) for approx. 13/4 hours. Garnish if necessary. Delicious with apple compote
