Peel and wash the potatoes and cook them for about 20 minutes in boiling salted water. Wash apricots, grate dry and cut into cubes. Peel and finely dice the onion. Wash the smoked pork loin and dab dry.
Heat 1/2 teaspoon of oil in a frying pan. Fry the meat for 4-5 minutes, turning it over. Remove and keep warm. Add onion and apricot cubes to the frying fat. Add chutney and bring to the boil briefly.
Peel ginger, dice very finely or press it through a garlic press and add it to the chutney. Keep warm. Drain potatoes, add milk and mash with a potato masher until mashed. Season to taste with pepper, salt and nutmeg.
Serve the meat with chutney and mashed potatoes. Garnish with chervil.
