Kaiserschmarrn with apple compote

Ingredients

Servings: 4
  • 500 g Apples
  • 40 g Sugar
  • 100 ml apple juice
  • 2 TABLESPOONS Lemon juice
  • 7-10 Tbsp thinly peeled rind of 1 untreated lemon
  • 4 Eggs
  • 3 TABLESPOONS Sugar
  • 1 pinch Salt
  • 1/2 l Milk
  • 160 g Flour
  • 4 TABLESPOONS Sultanas
  • 4 TABLESPOONS Almond slivers
  • 40 g butter or margarine for baking
  • 2 TABLESPOONS Icing sugar
  • 7-10 Tbsp Lemon balm and apple slice

Directions

    For the compote, peel, quarter and core apples as desired. Cut the flesh into cubes. Boil up apples, sugar, apple and lemon juice and lemon peel and cook for about 10 minutes while stirring. Remove lemon peel. Separate eggs. Beat egg whites until very stiff.

    Mix egg yolk, sugar and salt. Add milk. Sift the flour and stir in. Fold in beaten egg whites and sultanas. Lightly roast the almonds in a pan without fat. Remove and put aside. Heat 10 g fat in the pan. Add 1/4 of the dough and bake at low heat for about 3 minutes. Pluck into pieces with two forks and bake while turning until golden brown. Remove from the pan and keep warm. Heat some fat in the pan and make Kaiserschmarrn from the remaining dough. Distribute on four plates.

    Heat 10 g fat in the pan. Add 1/4 of the dough and bake at low heat for about 3 minutes. Pluck into pieces with two forks and bake while turning until golden brown. Remove from the pan and keep warm. Heat some fat in the pan and make Kaiserschmarrn from the remaining dough. Distribute on four plates. Sprinkle with almonds and dust with icing sugar. Add apple compote
