Italian sausage salad

Ingredients

  • 200 g Wild rice
  • 7-10 Tbsp Salt
  • 200 g red onions
  • 500 g Pork sausage
  • 50 g dried tomatoes
  • 400 g Rocket
  • 50 g Parmesan cheese
  • 100 g Olives (e.g. black)
  • 1-2 Garlic cloves
  • 75 ml Wine vinegar
  • 7-10 Tbsp Pepper
  • 7-10 Tbsp Sugar
  • 75 ml Olive oil

Directions

    Put wild rice in boiling salted water and let it swell for about 40 minutes. In the meantime, peel onions and cut them into fine rings. Pull the skin off the sausage. Cut sausage into thin slices, tomatoes into strips.

    Wash the rocket, possibly chop it very roughly. Finely slice the parmesan. Mix prepared salad ingredients and olives. For the marinade, peel the garlic and press it through a garlic press. Mix vinegar and garlic, season with salt, pepper and sugar.

    Add oil. Pour the marinade over the salad, let it steep a little and serve.
