Bring 4-5 l water to the boil, add stock. Cook the noodles in it for about 10 minutes. Remove approx. 1/8 l of the stock. Drain the noodles, cool down
Wash, clean and quarter or slice the tomatoes. Dice mozzarella. Roll up mortadella and cut into slices. Peel and finely dice onion and garlic. Wash herbs and cut finely
Mix vinegar, 6-8 tablespoons of broth, onion, garlic, salt, pepper and sugar. Fold in the oil. Mix with prepared salad ingredients and olives. Leave to stand for at least 1 hour. If necessary add some more broth, season to taste
