Iced yoghurt with red fruits

Ingredients

  • 1 Vanilla pod
  • 500 g Greek cream yoghurt (10 % fat)
  • 50 g + 1 tablespoon of sugar
  • 250 g Strawberries
  • 150 g Raspberries
  • 125 red currants
  • 7-10 Tbsp Lemon balm

Directions

    Cut the vanilla pod lengthwise and scrape out the pulp. Mix yoghurt, 50 g sugar and vanilla pulp. Put in the freezer and freeze for 1 1/2-2 hours. Stir well with a whisk every 20 minutes.

    Wash, clean and halve the strawberries. Sort raspberries. Wash the currants and strip the berries from the panicles. Put the berries in a bowl. Add 1 tablespoon of sugar and chill for about 15 minutes

    Just before serving, place the berries in bowls. Cut yoghurt into small balls and add to the berries. Decorate with lemon balm, serve immediately
