1 Line (bottom and sides) a square pan with baking paper, leaving the sides protruding. Take the ice cream out of the freezer
2 Purée the frozen fruit in a blender, adding the sugar and lemon juice. Keep half of this purée in a cool place.
3 Mix the rest of the fruit purée with the ice cream in a non-homogeneous way and distribute it in the mould. Cover and place in the freezer for 2 hours.
4 Unmould the ice and cut 8 identical rectangles out of it. Place each frozen rectangle between two wafer plates. Serve with the reserved fruit purée.
