Peel and wash the potatoes. Cut them in half, close together. Put 1 bay leaf and 1 sage leaf alternately into the incisions. Melt the fat and spread it on an ovenproof dish. Place the potatoes with the incisions facing upwards, spread with fat and season with salt.
Bake in a preheated oven (electric: 200 °C/ gas: level 3) for approx. 45 minutes. In between, brush several times with the remaining fat. Sprinkle with cheese 20 minutes before the end of the cooking time. Garnish the dish with laurel all around as desired. Delicious with olive pesto
