Remove the skin from the sausage. Slice the sausage, quarter the ham lengthwise and cut into slices. Drain mustard gherkins. Peel onions and cut into rings. Wash parsley, dab dry and pluck leaves from the stalks.
Put sausage, parsley, onion rings and mustard gherkins in a bowl. Add vinegar and oil and mix. Season to taste with salt and pepper and leave to marinate for about 30 minutes. Flavour salad with salt, pepper and vinegar and garnish with chive flowers. Tastes good with farmhouse bread
