Ingredients

Servings: 4
  • 2 Egg Yolk
  • 1 TEASPOON Mustard
  • 150 ml Oil
  • 3 TABLESPOONS Whole milk yoghurt
  • 7-10 Tbsp juice of 1/2 lemon
  • 7-10 Tbsp Salt
  • 7-10 Tbsp white pepper
  • 1 collar Thyme
  • 8 ready-to-cook trout
  • 8 Bay leaves
  • 2 Garlic cloves
  • 7-10 Tbsp Thyme and lemon

Directions

    Mix the egg yolk and mustard. Beat 125 ml oil drop by drop with the whisks of the hand mixer. Add yoghurt and lemon juice, season to taste with salt and pepper. Wash the thyme.

    Wash the trout, dab dry and fill with thyme and one bay leaf each. Peel the garlic, press it through a garlic press and mix with the remaining oil. Brush the trout with the oil and place them on a special aluminium tray for the grill.

    Grill the trout on the charcoal grill for 15-20 minutes while turning them until crispy brown. Pour lemon mayonnaise into a small bowl. Trout with thyme and lemon slices, garnish the sauce with grated lemon.

    Bread rolls, brown bread or roast potatoes taste good with it.
