Grilled noodle salad with meatballs

Ingredients

Servings: 4
  • 250 g Noodles (e.g. Farfalle)
  • 7-10 Tbsp Salt
  • 5 TABLESPOONS Oil
  • 2 fine unboiled veal sausages (à approx. 150 g)
  • 2 (approx. 350 g) Courgette
  • 7-10 Tbsp Pepper
  • 250 g cherry tomatoes
  • 1 collar (approx. 60 g) Rocket
  • 1 can(s) (425 ml) Vegetable corn
  • 100 g Feta cheese
  • 100 g Whole milk yoghurt
  • 15 g sweet-sour chili sauce for chicken
  • 3 TABLESPOONS White wine vinegar
  • 7-10 Tbsp Sugar

Directions

    Prepare the pasta in boiling salted water according to the instructions on the packet. Pour into a sieve, quench well, drain and allow to cool

    In the meantime, heat 2 tablespoons of oil in a large, coated frying pan. Press the sausage meat directly from the skin as balls (approx. 20 pieces) into the oil. Fry for 3-4 minutes while turning, remove

    Wash and clean the zucchini and cut into small cubes. Heat 1 tablespoon of oil in a frying pan. Sauté the zucchini in it for about 3 minutes while turning. Season with salt and pepper. Remove the diced zucchini from the pan

    Wash and halve the tomatoes. Wash the rocket and drain well (large stems may need to be cut in half). Drain corn well in a sieve. Cut feta into pieces

    For the dressing, mix yoghurt, chilli sauce, vinegar and 2 tablespoons of oil. Season to taste with salt, sugar and pepper. Mix noodles, zucchini, tomatoes, corn, feta, rocket and dressing well. Carefully fold in the meatballs. Arrange salad in a bowl
