Clean, wash and chop the broccoli. Wash, clean and cut the sugar snap peas into strips. Wash and chop the parsley. Whisk eggs and parsley. Season with salt, pepper and nutmeg.
Roast the sesame seeds in a pan and take them out. Heat the oil in the pan. Brown the vegetables in it. Add 5 tablespoons of water, steam for 2-3 minutes. Add egg and let it fry to scrambled eggs. Clean, wash and shake dry the arugula.
Arrange scrambled eggs on pumpernickel. Sprinkle with arugula and sesame seeds.
