Ingredients

Servings: 4
  • 200 g fine leaf spinach
  • 7-10 Tbsp Salt
  • 1/4 l Milk
  • 2 Eggs
  • 100 Flour
  • 7-10 Tbsp Pepper
  • 1-2 TABLESPOONS Oil for the pan
  • 1 Onion
  • 1-2 Garlic cloves
  • 75 g paprika-filled olives
  • 75 g Sheep's cheese
  • 4 Tomatoes
  • 2 TABLESPOONS Olive oil
  • 200 g mixed minced meat
  • 7-10 Tbsp tr. Herbs of Provence
  • 1 TABLESPOON Tomato paste

Directions

    Clean and wash the spinach. Blanch 100 g briefly in boiling salted water, then drain and puree. Mix milk, eggs, flour and pureed spinach to a smooth dough.

    Season with salt and pepper. Heat oil in portions in a pan (approx. 24 cm Ø) and fry 4 wraps one after the other. For the filling, peel and finely chop the onion and garlic. Chop the olives as well.

    Cut the feta cheese and tomatoes into small cubes. Heat the olive oil. Fry the garlic, onion and minced meat for about 10 minutes. Season with salt, pepper and dried herbs. Stir in tomato paste.

    Deglaze with 100 ml water. Add the olives, tomatoes and diced sheep's cheese, and let it boil down for another 5 minutes at high heat. Season if necessary. Add the remaining spinach. Spread the filling over the wraps, roll up and serve.
