Greek lemon chicken

Ingredients

  • 500 g Shallots
  • 2 Lemons
  • 2 Limes
  • 200 g Sugar
  • 1/8 l Vinegar
  • 1 (approx. 1.2 kg) Chicken
  • 3 TABLESPOONS Oil
  • 7-10 Tbsp Salt
  • 7-10 Tbsp Pepper
  • 2 medium sized courgettes (approx. 200 g each)
  • 200 ml dry white wine
  • 4-5 Bay leaves
  • 1 glass (156 ml) black olives

Directions

    Peel the shallots. Wash lemons and limes thoroughly and cut into slices. Melt sugar completely at medium temperature. Add 200 ml water and vinegar while stirring continuously.

    Cook the shallots, lemons and limes in it at high heat for about 5 minutes. Meanwhile wash the chicken, dab dry and cut into 8 pieces. Heat the oil in a large frying pan. Fry chicken parts on all sides.

    Season with salt and pepper. Clean, wash and chop the zucchinis and add them to the chicken. Douse with white wine. Add prepared ingredients, stock and bay leaves. Cover the roast and put it in the preheated oven (electric cooker: 200 °C/ gas: level 3).

    Let it stew for about 30 minutes. Then fold in olives and season with salt and pepper. Garnish as desired. Serve with fresh white bread.
