Ingredients

  • 750 green grapes
  • 225 g Butter or margarine
  • 175 g Sugar
  • 2 packages Vanillin sugar
  • 1 Egg Yolk
  • 75 g Flour
  • 85 g Cornstarch
  • 1 knife tip
  • 7-10 Tbsp Baking Powder
  • 200 g crushed almonds
  • 3 TABLESPOONS Milk
  • 4 Eggs (size M)
  • 2 TABLESPOONS White wine or lemon juice
  • 1 pinch Salt
  • 7-10 Tbsp Icing sugar
  • 7-10 Tbsp Lemon balm
  • 7-10 Tbsp Grease

Directions

    Wash the grapes, drain them and put some aside for decoration. Cut the rest in half and remove the seeds. Cream 125 g fat, 75 g sugar and 1 sachet vanilla sugar. Add the egg yolks.

    Mix flour, 75 g starch and baking powder and stir in. Mix 100 g ground almonds and milk and fold in. Grease a springform pan (26 cm Ø). Fill in the dough, spread it with a tablespoon so smooth that a hollow is created in the middle.

    Separate eggs. Cream remaining fat. Add 50 g sugar and the remaining vanillin sugar. Add egg yolk and white wine. Mix in the remaining almonds and cornstarch. Beat egg white until stiff.

    Sprinkle salt and remaining sugar and let the beaten egg white and grapes fold into the almond paste and spread on the sponge mixture. Bake in the preheated oven (electric cooker: 175 °C/ gas: level 2) for about 1 1/4 hours.

    Cover the cake with parchment paper after about 40 minutes to prevent it from turning brown. Let it cool down and dust with icing sugar. Decorate as you like with grapes and lemon balm. Makes about 16 pieces.
