Ingredients

  • 300 g + 2 tablespoons flour
  • 4 Eggs (size M)
  • 7-10 Tbsp Salt
  • 7-10 Tbsp grated nutmeg
  • 3-4 Tbsp Mineral water
  • 3 Onions
  • 20 g Butter
  • 100 g Mountain Cheese
  • 2 stem(s) Parsley
  • 1 TABLESPOON Oil
  • 7-10 Tbsp Grease

Directions

    Mix 300 g flour, eggs, 1 teaspoon salt, nutmeg and mineral water to a smooth, thick dough. Let dough rest for 1-2 hours. In the meantime, peel onions, cut them into thin rings and turn them in 2 tbsp. flour.

    Heat butter and fry onions until golden brown. Grate cheese finely. Wash parsley and chop it except for something to garnish. Bring plenty of salt water and oil to the boil. Gradually put a part of the spaetzle dough on the moistened "spaetzle board" and scrape fine strips into the boiling salted water with a long knife.

    Peel garlic and ginger and dice finely. Peel onions and cut into fine strips. Wash the meat, dab dry and dice. Heat oil in a casserole dish. Bring meat to the boil in 2-3 portions until the spaetzle rise. Remove the spaetzle with a skimmer and rinse briefly in a sieve under cold water. Drain and keep warm. Process the remaining dough in the same way.

    Mix the spaetzle with the cheese and place in a greased casserole dish. Spread onions over the cheese spaetzle. Bake in the preheated oven (electric cooker: 200 °C/ convection oven: 175 °C/ gas: level 3) for 20-25 minutes.

    Sprinkle casserole with parsley and garnish. Serve with a mixed salad.
