Select the salad, wash and drain well. Wash, halve and seed the pears. Cut halves into 3 slices and sprinkle with lemon juice. Cut the gorgonzola into pieces. Cut the ham in half lengthwise.
For the dressing, mix vinegar, honey and mustard, fold in oil. Season with salt and pepper. Spread cheese in portions in the middle of the pear wedges and wrap with ham. Mix the salad with the dressing.
Arrange on a plate together with the pears. Spread the rest of the cheese on top. If necessary, serve with wooden skewers.
