Wash goose breast, dab dry and season with salt and pepper. Put goose breast on the fat pan of the oven. Roast in the preheated oven (electric cooker: 200 °C/ convection oven: 175 °C/ gas: level 3) for about 1 1/2 hours. Wash apples, grate dry and add to the goose about 15 minutes before the end of the cooking time. Remove the goose and apples and keep them warm.
Skim off frying fat. Remove the frying fat with the stock and pour into a pot through a sieve. Add apple juice and bring to the boil. Stir starch with some water until smooth and thicken the sauce with it. Season to taste with marjoram, salt and pepper. Remove goose breast from the bone. Cut the meat into pieces and put it back on the bone. Arrange apples and goose breast on a plate. Garnish with orange slice, physalis and marjoram.
