Peel, wash and grate the carrots in a bowl. Wash and quarter apples and cut out the core. Cut the flesh into thin slices, mix with lemon juice and add to the carrots.
Season the vinegar with salt, pepper and sugar, fold in 4 tablespoons of oil. ##Peel ginger, chop finely and stir in. Whisk egg. ##Almonds## crumble coarsely. Mix breadcrumbs and almonds.
Turn the goat's cheese taler in flour, pull it through the egg and turn it in breadcrumbs mixture, press a little. Heat 3 tablespoons of oil in a frying pan. Fry the goat's cheese taler in it from both sides until golden brown, take it out.
##Basil## wash and pat dry. Pluck the leaves from the stems, except for a little bit for garnishing, and chop finely. Mix carrots, apple slices, basil and vinaigrette, season with salt, pepper and sugar.
